Some of you may know that I love to cook. I love to try new recipes and plan out menus. A few months back I had a recipe party where everyone brought a dish to share and the recipe to go with it. I was thinking of having another one, with summer recipes, and was wondering if anyone would be interested and what days work best? Also, I am looking for a good pico de gallo and oatmeal cookie recipe if anyone would like to share!

Count me in! I would love to do that, I like new recipes too :) Pretty much any day works best for me, except Wednesdays, those can be tricky sometimes :)
Well, I'll be in town June 24th thru July 2nd so any of those days would work for me. Just teasing! We do need to get together when I'm out there tho!
- 4 ripe Roma tomatoes, seeded and finely chopped
- 1 small white onion, finely chopped
- 1/2 cup cilantro leaf, chopped (or more to taste!)
- 2-3 jalapeno or serrano peppers, seeded and finely chopped
- 1-2 tablespoons lime juice
salt to taste
I like to add 1-2 minced garlic cloves or even some garlic powder. And add finely diced avocado when ready to serve.
that sounds fun!! I have a friend that does a gourmet dinner group. they are teamed into groups of 2 women and then once a month they take turns putting on a dinner and swapping the recipes and things. I've been wanting to put something like that together and I think you would like it!!

Do you have the recipe for peanut butter finger bars? It has oatmeal in it. I usually delete the butter and use applesauce instead, along with whole wheat flour.

Here's a recipe for a yummy oatmeal cookie.
Chewy Oatmeal Cookies
1 cup butter
2 cups brown sugar
2 eggs
1 1/2 tsp. vanilla
2 1/4 cups of flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 cups of quick oats
1/2 cup sifted powdered sugar for rolling and dusting.
Preheat your oven to 350 degrees
Cream butter and sugar in your mixer until smooth; add eggs one at a time and beat to combine. Add vanilla and beat 1 minute more. Sift flour, salt, soda, and baking powder together and beat on low speed. Add oatmeal and stir until just combined.
Using a large cookie scoop (1/4 cup) scoop level balls and roll in powdered sugar. Place on cookie sheet 3 inches apart. Flatten slightly with a glass bottom dipped in powdered sugar. Bake for 12-15 minutes or until no longer shiny. Remove from cookie sheets - dust with more powdered sugar if you like!
